Yummy Christmas Bundt Cake

Come on a visual tour of my Baking efforts for Christmas and get motivated.

I call myself an enthusiastic Baker, open to ideas. Love all things Homemade and always ready to dish out baked goodies at the drop of a hat.

I stumbled upon this easy Bundt cake sometime back and could not resist baking it. Turns out, it’s a hit in my household. A little delicate, it needs a gentle hand to get the shape right. Needless to say, the reward is worth the effort.

Here, I added my twist and turned a simple cake recipe into a Spicy Carrot Bundt Cake, as it’s the season of fresh Carrots.

Cookies anyone? Imagine the aroma of warm cookies in your Home during Christmas…Heaven on Earth…perfect way to Hygge this winter.

These 2 types of Cookies…Chocolate and Coconut turned out perfect and I have already promised my Family of these as return gifts..

Easy recipe for Coconut Cookies: makes 10 medium sized cookies

All purpose flour: 1 cup

Dessicated Coconut (you can use Coconut powder also): 1/2 cup

Sugar: 1/2 cup

Cold Butter : 1/2 cup

Baking powder: 1/2 teaspoon

Salt : 1/4 teaspoon

Milk: few spoons, if required

Method:

Whisk cold butter and sugar untill light and creamy

Using a sieve, add the flour, baking powder and salt.

Add the coconut, keep some aside for covering the cookies.

Mix the above ingredients and make a dough. If required, use a little bit of milk.

Pro tip: cover the dough and refrigerate for 20 minutes. This will help in getting well shaped cookies.

Line the tray with baking sheet/aluminum foil and place the cookies leaving some space in between as they will spread.

Once you shape the cookies, coat them in the coconut powder. Now ,in a preheated oven, bake them at 150 degree Celsius for 20-25 minutes.

Take them out of the oven and cool them on a wire mesh.

Apple Pie

Perfect Apple Pie

Apple Pie is the perfect Dessert during the fresh Apple season. The markets are overflowing with a wide variety of Apples and I am not too finicky about what variety to choose from. Here, I have choosen the Golden variety of Apples from my neighborhood fruit seller.

You can make the pie crust in advance (one week) The filling should be fresh to get the perfect taste. In fact, you can add the filling a day prior and warm up the pie when you want to eat it. The crust made in advance should be kept in the fridge.

The Apple Pie is a huge hit at my home. I serve it with Cinnamon cream and Vanilla Ice-cream.
